Thanksgiving night pork butts; possum

I got home from the family Thanksgiving gathering and went to work on a couple of pork butts. Pulled pork is perfect for a lazy weekend of fighting a cold and watching football.

I put the meat on around 8:15 tonight, went in to grab my phone, and came back to take this pic. Just after I took the pic and was setting the lid back on the WSM, a young opossum calmly walked out from behind it. He did not seem surprised to see me and just ambled off into the yard.

In case he comes back, anybody got any good smoked possum recipes?

Didn't wake up until 9:15 this morning. The Stubb's was only putting the WSM at about 160. After I stirred/knocked the ash down, it came back up to the 200 area pretty quick, but there were just a little charcoal left to burn. Meat at 150 to 160.

I fired another chimney full of Stubb's and put that on. Now it is blazing at 250+ with the bottom vents almost closed.

Should be eating pulled pork and watching football this afternoon.
 
Thats a whole lotta pork on your wsm, you should have enough for today's games, tomorrows and sunday.
 
Took the butts off at 1:20 p.m, after about 17 hours at mostly 225 or so. Temps of the two butts were 190 to 200 in different spots. Let rest in oven about an hour. Pulled with my new insulated gloves that worked well. Texture and tenderness were very good. Made No. 5 sauce and served on soft buns with sauce and cole slaw.

Enjoyed sandwiches as LSU managed a win over Arkansas.

No sign of the possum returning so far.
 
I have no skin in this game, but here is a link to the gloves I used for the first time today ($12; no shipping). I learned about them on this board. They worked well. Enough insulation to keep the rested meat from being too hot, but allowed manipulation to pull the meat.

I bought two pair for $24. Now that I know they work, I'll give the other pair to a friend.

Here's the way we do possum. Take a cedar plank, place skinned possum on it. Smoke until 165*F internal. When done, push possum off board into trash can. Finish by throwing plank into trash can. ;D
