Doing a "test" cook before my son's 30th birthday tomorrow, a 2 lb butt, 4 short ribs some chicken and a kielbasa, at least we will have some good kielbasa. tomorrow I only have 4 hours before the party so I am doing 2 4 lb butts and 1 2 lb butt, a rack of ribs, some country style ribs and a kielbasa. figure the bigger butts may not be done in time for the party but there is lunch Monday.
The Country ribs came out dry, the chicken had too much smoke (for me), the Beef short ribs were GREAT! The Kielbasa, well you can't kill that.
The 2 pound butt is still going, I put it on at 3 pm and it is now 7:30 and it is up to 176. The WSM ran at 237 for 5 hours without wavering, about an hour ago it stalled and I bumped it to 275 and it has gone from 160 to 179 in 1 1/2 hours.
This is why I was doing the test, so I know what to expect tomorrow.
