Jim, she makes a stuffing first, fry up some tomatoes, onion garlic parsley and mushrooms, if you have some crusty bread your cube up a little,

Cut the stem off, cut the top off so it is flat mostly across the top, pull them open till the center is a hole you can stuff, drizzle with EVOO S&P, stuff, then more EVOO S&P

Then in a pot on the stove with them standing in a couple inches of water and simmer with the top on for approx twenty minutes then in 400 degree oven, in the same pot with the top on for approx 45-60 minutes until tender, you tell by the outer leaves, they will pull cleanly off and be tender.

She must like you Jim, she never told me how to do them before
