Hello,
I'm a begginer at smoking and I have a few questions.
I bought a (bar b chef) temperature gage from barbeques galore, it is one of those big gages with a 3 inch face and 4 inch probe.
I mounted it opposite the top vent and handle, however, when it reads say, 250 my polder says about 270 through the vent, and higher at the top grate.I thought the temps. at the top grate are to be lower than the lid. I did test the single purpose polder in boiling water and it read 210.
Any comments will be appreciated.
Also what does BRITU and ECB stand for.
Thanks J.C.

Strange temp behavior. The grate is reading higher than the dome? Could it be that the thermometer on the grate is actually touching the metal of the grate? This could possible through off that reading.

BRITU = Best Ribs In The Universe.
ECB = El Cheapo Brinkmann

And finally, welcome! If you like to cook you're really going to like your WSM.

Hi Jeff,

First, just wanted to say welcome to another member from Sonoma County, my old stomping grounds!

You can find an article on BRITU on the website:

Regarding the thermometer question, have you tested the Bar B Chef in boiling water? Maybe it's the culprit?

Regards,
Chris
