WOW!!!! Thanks for all the input. I have a lot of learning to do but with everything said here I think it will go alot easier.

And to add to Mr. Beisinger statement. I found early on that cooking below 250 was pointless as well but also that being concerned about 25 degrees of drift in grate temp either way is insignificant, once you learn what done is. Especially with Butt.
