I did some ribs yesterday - trying to aim for 250 at dome. Measured with a therm through the vents stuck in a cork. Used lump, with the brinkman pan.
I found it hard to get the therm to read above 245, and after three hours had to refill the brinkman pan (??). Ribs cooked to dryness after 3.5 hours and water in pan boiling vigorously.
Does this suggest that the temp was actually well in excess of what the therm was telling me?
Also put I lb of sausages on after removing ribs and they were cooked to very well done in about 1.5 hours.
Any suggestions welcome.
Thanks. Andrew
