temp readings

Hi everyone,

I have a question about some temp readings I was getting this weekend. I was cooking 3 racks of back ribs this weekend at 225 degrees. In the first hour the temp went up to 160. For the next 4 hours the rib temp gradually dropped to 149 degrees. I have never seen this before, but my smoking experience isnt to vast. At 2 hrs and at 4 hrs the lid was opened briefly for a quik mop and quickly returned to 225 degrees. At the start of the 5th hour i raised the pit temp up to 250. The rib temp finally started to rise. At six hours I pulled the ribs off the grill. The temp of the ribs had finally risen to about 170. They came out great. I have heard some guys talk about briskets stalling but they are a lot bigger. So has anyone else have this happen?
 
not sure why it happens but i am sure someone that does a lot of temp monitoring could tell ya. but it happens with all meats and it is normal.
