I am cooking to Butts, I have a hood temp 250-253 and a surface temp 230-235 is this okay? I noticed that a lot of the cook temps for cooking methods are at the hood and and range between 225-230 my hood temp always seems to be 250.
 
If you have a lid temp of 250º then your top cooking rate temp will be about 15-20º lower than the lid temp. I like to cook at a min of 250º grate temp so the lid temp will be in the 265-275º range. The lower the temp you cook at, the longer it will take is all, as Scooter mentioned.
 
you hit my ideal target temp. I try to get 250-260* at the lid and I am always pleased with the results. Just did a chuck roll at that temp and it nearly fell apart when finished.
