Temp probe question - help!

After testing all four Nu Temp probes again, all right on 211 degress in boiling water. Can I expect a "300 degree" reading about 10 minutes into a cook again? Last time, I used 2 of the new probes and one old one....the old one for lid temp, one of the new ones for internal brisket, the third one on grate. The internal and grate level both sky-rocketed to 300. The older one on lid was fine. Afterwards, all checked out okay..... suggestions?????
 
How are you routing your wires into the smoker? I had problems when I used to put the lid on top of the wires. Bought the BBQ Guru eyelets and now run the probes through those without any problems. You also want to keep from getting the braided wires wet as that can cause eratic readings as well.
