Temp Inversion??

OK, put my wings on about half an hour ago. I was targeting a cooking temp of 250. Interestingly, my lid therm is reading about 240, but the grate therm is pegged at around 310. Minion start, no water pan. I know this happens, but just wanted to see if anyone thinks I should target 250 at the grate, or let it be.

I don't know why, but this happens to me quite a bit. I measure the temp at the grate with my stoker, and I know they are accurate as I test them regularly. I get lid temps higher, lower, right on. I've given up reading lid temps for the most part.

To answer your question, I would let it go at 310. There's nothing wrong with cooking chicken at that temp, but it will get done more quickly.

Thanks Pat. Cooking right along now. It's windy today, so I'm having a little trouble. I've got all three bottom vents closed. Top vent is open, but one of the holes has my BBQ Guru therm w/ a silicone plug in it. So I guess that would be considered 2/3 open. Temps at the grate are around 340 now, w/ about 260 at the lid.
