Had a couple of good friends around Sat night, girls wanted Chicken us guys fancied a T bone now i knew i wouldn't get any good visual char / look on the steaks from low n slowin on the WSM but i'm hooked on how this thing leaves the food so fall apart tender.....so did them anyway on it....and she didn't let me down. So as mentioned steaks don't have the desired char look like if i had done them on a Kettle or Genesis but..man so tender.
Chicken brined overnight and then air-dried in fridge
Mixed these fella's together for the rub
I mixed equal parts of these sauces together to baste the chicken - they get along great mixed together
