I have always BBQ'd BB ribs and I have never done spare ribs. This weekend I plan on smoking a couple of spare rib racks from Costco. These are the cryovac spare ribs from Swift (Kirkland brand). I read through Chris' spare rib preparation page and I was wondering if anyone knows if the Costco croyovac spares contain a breast plate?
I know it may be personal preference, but generally speaking, is it a rule of thumb to always trim spares down to St Louis? Does anyone ever smoke the spares with the breast plate attached?
