Sweet and Savory

Sweet and Savory, in my limited but getting more experience of rubs I have noticed that each rub mostly has sweet ingredients and savory ingredients. The question that comes into my mind is “what would happen if I mixed all of the sweet ingredients and all of the savory ingredients separately and then applied each rub separately for instance savory first followed by sweet”? Has anyone tried this? Would it even make a difference…for better or for worse?

Are you talking about applying both at the same time? I can see applying one (savory for example) as an overnight rub, then applying sweet just before the meat goes in the Weber - THERE you might notice a difference as the savory has had a chance to soak in, and the sweet is just complimentary at that point. But if you are putting them both on at the same time, I don't see a reason to separate the two...just my .02¢ :)

There's another thread brewing that discusses combining rubs. I see the Pitmasters contestants do it on TV. It's an interesting thought but I've not done it.
