Get some smoked salmon Peter and use it in california roll. I saw Scottish salmon in the central market in Budapest. It is not cheap though! Of course things like shrimp and eel can be used for both sushi and sashimi as well as the rolls.

it's a spicy mayo - 1Tbsp mayo, 1 tsp Sriracha.
