The ribs turned out great. My wife's cousin and my sister loved them and am waiting for the results from my neighbor who I brought a rack over to. I also thought they were quite good, but not perfect. I was able to bite into them without them falling off the bone, which I think is the way they should be done. They had a nice smoke ring, I used cherry and maple. I mopped them with Cattlemen's sauce with a bit of honey added to it. On a scale of 1-10 I would give them an 8. Still looking for perfection, I am my worst critic.
