Sunday Smoked Turkey Breast

First off, today in Canada is Remembrance Day. A day to reflect and remember those that lost their lives defending our country. Thank you to all that have served and paid the ultimate price.

Haven't posted in a bit. Been very busy with other things and my cook time has not been available of late. Now, onto the cook!

So Saturday, I put together the brine for a nice big 3.5 lb fresh turkey breast from Costco. Used the apple juice brine from this site. Let it sit for a day and then pulled out and let dry in the fridge for a few hours before I got it cooking.

Took way longer than I thought this would. About 2 hours to get this done. WSM ran consistent at about 325 F the whole time. Maybe could have cranked the vents and got it a bot hotter, but temp was very consistent.

But though it took a bit long, I have to say that this was the best tasting, juiciest piece of turkey breast I have ever had. Smoke flavour was just the right amount. I typically don't like white meat from turkey as it tends to be very dry IMO. Again, this was no where near even potentially becoming dry. Tender and moist. Just a perfect piece of meat.
