Beef ribs, shrimp, onions, corn oh my! Heading out of town on work for a few days so this was my chance to empty the fridge and celebrate Memorial day a touch early. I started on the WSM with some beef ribs.

I seasoned the ribs with grey salt, course pepper and a touch of cayenne pepper.

Meat smoked for 2 hrs then I wrapped in foil with a homemade bbq sauce thinned with beer.

While the ribs smoked I made myself a little snack. I devained and brined some shrimp for 20min. I then dried and tossed with evoo, italian parsley, hot chili flake and garlic.

I saw on Steven Raichlens TV show he cooked stuffed sweet onions and thought I'd give it a try. The onion is stuffed with cooked bacon and onion mixed with bbq sauce then topped with a pat of butter.

I also cooked some of that early season corn that your hoping will be delicious and sweet but never quite is. This corn was ok. Ribs cooked for 40 min in foil. I finished the ribs on the OTG over direct heat.

Wow Jason - all of that looks first class. I have been thinking I would like to try beef ribs. The only ones I have seen down here are very short and fat. What cut of rib did you use and where did you get it? Also I would have expected it to take much longer - at what temp were you smoking them? The onion is pure genius. I make on that is stuffed with garlic - but that is going into my rotation soon... very soon.
