Sunday Brisket

As much as I like the traditional Sunday chicken, smoked brisket could easily replace it at our house. I also saved the point and crisped it up on the gasser tonight with some sliced yukon golds tossed in olive oil and S&P.

My wife requested a brisket. It's on the smoker now.

10.5 lb whole. Keeping it at 250 for the entire cook. See how that works out for me.
