Summer-Cold Fajitas

Beautiful day here in central Virginia. Threw on some skirt steak for fajitas tonight...

I have been wanting to give lump a try for a while but only could find Cowboy around these parts. Was in WalMart on Friday and they had Royal Oak...Awesome. First cook using lump.

We've had a Summer cold bug traveling around our house for a week and a half now. It's finally my turn to host it. I figured a little vitamin C, in screwdriver form, couldn't hurt. Vitimin C works great. After my second drink my sore thought and body aches are gone but I'm still sneezing and coughing...weird!

Skirts and peppers/onions ready for the lump.

Peppers getting a head start.

Skirts on, peppers finishing.

Everything off. This cook took exactly 1 screwdriver's worth...

Plated.

Fantastic meal. We absolutely love skirt steaks. Our favorite cut of beef for sure. I loved the lump, too. Very hot. No tire fire smell or smoke on start up. Very little ash. I'm a convert...The learning curve starts anew!

As an aside, TVWBB parents. Be careful, your kids watch any and everything you do and will copy you, good or bad. We were cutting limes for the fajitas and our 3-1/2 year old daughter asked for a slice. This is what she did with it.

Thanks for reading the ramblings of someone that has had too much vitamin C...

when you ask don for a drink he says "sure, grab a bucket!"

; ^ )

nice screwdriver lol

That all looks excellent Don. At least your daughter wasn't looking for the salt shaker and Patron.

Maybe she was thinking Tropical Smoothie...

Nice cook, Don. I too, recently tried RO for the first time - I don't think I'm going back to 'the old stuff'.

Don, I made fajitas Friday night, but I used thin cut rib eyes (on sale) and used Tyler Florence's fajita marinade. It truly was one of the best things I've ever made. I'm sure yours was as well. They sure look great.

nice skirt don, kids sure start early these days lol, don if u really love skirt steak or fajitas u need to find some black angus fajitas, the best ribeye in the world is no match for black angus fajitas

It was a gift and I think it was bought at William Sonoma but I think it was discontinued by them.

It's on Amazon though... Link

$50 seems steep and if I hadn't used one before I probably wouldn't have gotten it for myself. Knowing what I know now, I'd get it for that price in a heart beat. I love it and use it all the time. Well worth it IMO.
