Not a request, just wanted opinions.
A recipe for steak seasoning was in the St Louis Post Dispatch paper today.
The guy giving it cooks in comps, don't know what level.

Recipe:
1/4 cup salt
1/4 cup granulated sugar
2 tablespoons freshly ground black pepper
2 tablespoons ground white pepper
2 tablespoons granulated garlic

Tried suger on the steaks prior to cooking them ONCE. I will not do it again. My goal was to put on some nice color (the sugar will quickly carmelize. Color was really nice but neither my wife nor I cared for the taste.

I'd pass on the steak seasoning. I hate sweet stuff on steaks. Beef ribs and brisket are another story. But the roquefort butter, now your talking!

The only time I would suggest sugar in a rub for steak is when the flavor of the other ingredients veers toward bitter - and then only enough to balance that issue, not enough to read as sweet. Depending on ingredients, this is only sometimes necessary. I don't see it at all for the above recipe, which is essentially garlic-pepper.
