storing smoked chicken

I am getting my husband a WSM for Christmas. We raise (and sometimes butcher) our own chickens and he wants to smoke several (maybe 6-8) at a time. I have two questions. Does the smaller model WSM have enough room to smoke that many chickens? Also, how would you recommend storing extra smoked chicken for a longer time? My husband has this idea of brining and hanging in a cool sealed shed like in the old days but I don't want to get food poisoning! Thanks for any help.
 
Hey Anne, welcome to the forum. I have a 22, so I can't answer your question as to how many chickens you can cook. When we have extra chicken or pork, we usually pull it or cut it into small pieces and freeze it. I'm not sure about hanging in a shed. The meat will only be lightly smoked and i don't think the brine will have enough curing capabilities to ensure safe eating. Good luck.
 
Anne, I use the 18.5 WSM. And yes you can cook 6-8 birds but you will need to arrange them in a compact manner. Standing up, ala, beer can style should do it. Of course depending on size. I freeze cooked chicken frequently, I personnaly use a food saver system and a deep freeze, the meat should keep for a year if properly handled before and after smoking.

I frequently cook 4 chickens at a time, beer-can style. We cut them in half, vacuum seal each half and freeze. They taste almost as good after reheating as they do right off the smoker.
