Sticks on a Sunday


 
I looked at a Pecos at Academy this morning ( btw , they only had one Old Country smoker and it was a Pecos , very odd ) and the baffle plate is very similar to the Brazos and the gap appears to be about the same, about 3" wide , at its widest.
 
Thanks again Lynn. I think I'm am going to remove the tuning plate on my next cook and follow as many of your tips as I can manage to not screw up. And now I can feel another thread coming on, anyone else see that old country gravity feed at academy......... I might paint it red and call it a toolbox. That'll fool the ol lady right?
 
Lot of people use the tuning plates. It may come down to a personal preference. I ran several biscuit tests with the plates in diff configs, and they do balance out the heat. I just found them to be more trouble than I wanted to deal with. Next time ya fire up the Pecos, put temp gauges at both ends of the grate and open the FB door. If its like my Brazos, the stack end will heat up. That baffle does funny things.

Yes, I've had my eye on the OC GF. They've not made it to OKC Academys yet so I can eyeball one in person, but its interesting. I found a Masterbuilt 560 at Walmart a couple months ago for $250. And frankly, I've been impressed with the smoke , I expected a lot of white billowy and got a lot of thin blue. Its peaked my interest in GF's.
 
I've omitted that I've added a stack extension to my Brazos. Did that over a year ago. It does improve the draw through the cooker.

This fella has uploaded a vid this week on adding a stack ext on his Pecos. He did exactly what I've done. And I agree with him that the reason the temps rise at the stack end, is back pressure from air trying to exit. It goes back what I said about getting the same amount of air out of the cook chamber as goes into the chamber. This is why Aaron Franklin puts collectors on his stack end.

This is good . He takes it one step further by cutting off 6" of the stack to balance the temps. I do that with the damper on the FB door. If I had a collector, I could open up the door and really get some air flow through the cooker.
