DH made this for his dinner last night. Can't believe this, first time since '02 WOW!!!! He said it was EXCELLENT!!! Bet he won't wait as long to have it again.
(the recipe is for 2 steaks, he made the whole thing for his 1 steak)
Steak Diane
2 (6 oz.) Filet Mignons
1/8 tsp. salt
1/8 tsp pepper
2 TB. butter
1 tsp. Dijon-style mustard
2 TB. shallots, minced
1 TB. butter
1 TB. lemon juice
1 1/2 tsp. Worcestershire sauce
1 TB. fresh chives, minced
1 tsp. brandy
1 TB. fresh parsley, minced
Season both sides of steak with salt and pepper. Melt butter in a heavy skillet, add mustard and shallots. Saute over medium heat 1 minute. Add steaks and cook approximately 3 minutes on each side for medium rare. Remove steaks to serving plates and keep warm. Add into pan drippings, 1 TB. butter, lemon juice, Worcestershire sauce and chives. Cook for 2 minutes. Add brandy; pour sauce over steaks. Sprinkle parsley over the top.
