How long to leave it out of the frig before it goes on the WSM? I did a search but it returned 9 pages and the first 5 gave no help. Chris mentions leaving it out before cooking but I didn't see a definite time. I's a 4 bone from the small end, salt & freshly cracked black pepper rub.
 
Jim, I would do a min of 2 hrs. I myself would go for 3 hrs. Don't forget to salt it as soon as you take it out of the fridge for it's warm-up.

Bryan, 3 hours was perfect and that was an awsome piece of meat. I almost walked out of the store with a select cut but I looked at the price and knew $42 was too little for prime. It has me thinking about trying a select standing rib roast.
