Stacking Boston Butts

Doing a huge cook this weekend - what i would like to know is if i can stack boston butts on top of each other in the WSM?

Any advice you can offer would be great - pros, cons, possible consequences all welcome.

Thanks for the help!

I've never cooked more than 4 at a time.

Others have described standing butts on end, and skewering together, getting 3 on a grate.

Stacking them probably prevents some bark formation, and maybe(?) slow the rendering process with such a large mass.

not sure.

How many are you cooking?

I did 6 once - 3 on a rack with a string around them - after a bit they shrunk until they weren't touching so the bark was fine.

They took a while, probably because of the mass of meat and the Thermal Inertia. But it was much quicker than cooking 4 and 2 or 3 and 3!

I think I would try Rich's approach, 3 standing up loosely tied before I stacked them. I can't imagine the stack being stable for one thing. Even if it is stable at the start it may not stay that way after shrinkage.

I think I would do the 6 smallest, 3 per rack, and then the 4 largest, 2 per rack.

I would definitely not stack them! Since you have ten of them I would just cook 5 at a time, 2 big ones on the bottom grate and 3 small ones on the top. If you're reallin in a time crunch cook the butts until they hit 165*, double wrap in heavy duty foil and finish them in a 300* oven. You could probably do all 10 this way on one load of coals in the WSM.
