not sure if they are in other places, but in florida, Target was advertising $1.49/lb st. louis style cryovac ribs by hormel. Had the wife stop by and pick me up a few packs and plan to cook some this weekend. I got a pile of ribs for $5/slab, lots of meat.

Yes, just looked, the label said up to 12% of patented solution to preserve juiciness and tenderness.

how does this hurt the quality vs. unehanched?

edit: just just a quick search and saw something about a ham taste. that's disappointing.

Definitely leave the salt out of your rub. Consider your ribs pre-salted. Unfortunately, the ribs I can find at my local grocery are all enhanced as well. Living "in town", it's a 30-45 minute drive to a Costco where I can get better meat compared to 2 minutes to the Harris Teeter...you can guess which one I choose when we decide we want ribs for dinner on Saturday afternoon.

it is basically the same stuff they use to preserve SPAM. they just inject a lower concentration of what you get in the spam can.

to me it tastes a lot like eating spam or a military MRE others cant tell the difference.

it is just a horrid thing to do to good pork.

smoked them yesterday and feed a med size group. I found them to be excellent, as did the others. I'll stay away from the ehanced going forward but i was not disappointed, they were very good.
