Had a plan all week to do St. Louis style ribs today…had them in the freezer and knew they had to be cooked.I’m definitely more of a baby back fan but I do like some SLC from time to time. Fancied a rub out of a few items in the cupboard!After prepping ribs I went to the grocery store and was planning on getting some chicken thighs to throw on with the ribs but then I came across a 4 pound brisket point that sounded like waaaaaaaay more fun So I put one rack in the basement of the 18 WSM and the brisket and other rack up top. BnB and some peach and pecan.This was the first outdoor dining of 2022! My kids and some friends who were over devoured almost all the ribs but I’m hoping for some good pork/ brisket nachos on Monday! Cheers!
