St. Louie ribs wrapped in bacon

The game plan - trim two racks of St. Louie ribs and cut in half. Season the ribs on both sides and stack with a strip of bacon between each cut of ribs.

Wrap the stacks in bacon and then plastic wrap

Now wrap in HEAVY DUTY foil

Now put the ribs back in the fridge while you prepare your pit.

Smoker was up to temp 340 and put the package on the WSM for one hour. Yes the plastic wrap is still on the bacon....just praying that it doesn't melt.

Now take the foil and plastic off. The plastic hadn't melted and the ribs were so hot I had to use gloves to get them back on the WSM. I would compare this to boiling your ribs (which I have never done), but it was like steam cooking the ribs for an hour.

The ribs go back on the WSM for another two hours, running at 325 - 350

Half time! Better have a few....things are about ready to get busy.

Two hours are up and it's time to break this mess up. The plan is to leave the bacon on the WSM to crisp'n up. The ribs will be finished off on the performer with medium direct heat, basting and flipping every 5 minutes....told you it would get busy. The plan is an hour on the performer or until we pass the tooth pick test.

Very interesting cook James, lot of effort went into those. They look beautiful as does your plate. Was it worth it to you taste wise?

Bill...the purpose of the bacon is to help capture the smoke flavor and these were some of the best tasting ribs that I have cooked. It was worth my effort in that I got to spend some time in the backyard with the grills. This cook was on my bucket list.
 
Works for me, they looked fantastic. As you have seen I have that same affliction my friend, I like to spend time there also.
 
Wow! Well played. I never thought about wrapping ribs in bacon, but then again EVERYTHING is better wrapped in bacon.
