"Squeezed" in a Brisket

Smoked a 12.5 lbs prime packer from costco this Saturday for a family gathering on my WSM 14. Despite its small size, I've been able do brisket a few times on this smoker. How I fit the brisket is by removing the top grate, then laying a rib rack against the side on the bottom rack, so the brisket is essentially standing straight up. This time I had a little mishap, checking at the 3 hour market to spritz, the brisket had folded over itself! I don't think it impacted the cooking time, just ended up with a slightly lighter bark in the area that was blocked (on the bottom end, not fatty side).

Overall I was pretty happy with this brisket, not my best but every brisket is different. Smoke level was great and had a good smoke ring. I may have needed to trim more fat off the top in prep as parts of the flat had a thick amount of fat attached, but nothing unappetizing. May need to get a WSM 18 down the line for these large cooks though, would love to lay the brisket flat.

Cheers,
Kyle
