Decided to use the smoker being that it was a little warmer today than yesterday (34F versus 26F with lots of wind).

Here they go:

I made my own rub (chile powder, black pepper, garlic powder, thyme, paprika, all-spice, with lemon juice, soy sauce, and two scotch bonnets). All ingredients were blended together.

Slapped them onto the smoker with some maple wood. They came out damned-tasty!

Used some finishing sauce, too.

Might fire these up as an appetizer for Thanksgiving.
 
Looks awesome Brian....I made some yesterday to enjoy while watching the OSU-UM game (<span class="ev_code_RED">GO BUCKS</span>)...these are a great, easy cook...
 
Thanks. I enjoyed mine during the UConn/Miami basketball game. I saved some for the USF/UConn football game which starts in about an hour! hehe

This was the coldest I've ever smoked in and it went well. Top grate temps did not get any higher than 305F. The wings took 2.5hrs from start to finish. Surprisingly, each wing was nice and moist.

Just curious where you're located? I noticed the Dreamland sauce. I'm in Birmingham, and made regular pilgramages to the original Dreamland in Jerusalem Heights (outside of Tuscaloosa) when Big John still manned the pit.

I enjoy their sauce still.

Just wondering how far the stuff had made it away from its native Alabama?

It's funny of all BBQ meats, there's something about wings, when I see pics of them done on a WSM, that is the only thing I want to eat. Just pile up a platter full of them. I'm thinking I should do that in the next time I have a day off, since it's pretty easy to keep them low carb.

It's all going out the window for a day or two around Thanksgiving though. Pecan pie, homemade rolls and mashed potatoes look out!
 
Pat, I was down in Birmingham for work a few weeks ago and went to Tuscaloosa for a day. Picked up some sauce for myself and a friend of mine (who smokes every weekend). The Dreamland sauce is pretty good. Surprised how good it is with chicken, especially.

I also ate at Jim and Nick's in Birmingham and it was awesome! Their smoked turkey was probably the best I've ever had!

Transplanted Buckeye here...grew up in Columbus - Dad was voluntary faculty at OSU, no pay but got to buy season tickets...Archie Griffin when to high school down the street. Given how bad the Lions are, the only professional football team I follow is OSU.
