Been chatting with Brett and wanted to do his sprouts.
Tonight was a satisfying meal.
Tonight was picanha roast, cap cut off...sprouts, baked potato and a fresh corn and bean salsa.
Everything done on the performer, salsa is fresh.
I’ve been doing taters lately specifically.
Microwave for 20 minutes on power level 2, flipped half way...olive oil and lots of salt....finished on the Q not foiled for about 20 - 30 minutes. Creates a firm skin and has lots flavour.
Picanha was cooked indirect to 118, seared to about 123 and rested for 25 minutes.
Sprouts were done according to Brett....a bit too much char on this one, next set of pics was the first sprout cook, was a bit better.
Quality olive oil, basic rub, garlic, black pepper, seared then cooked indirect for about 20 minutes.
Finished with some parm and balsamic vinegar....
This one was very satisfying.
The corn n bean salsa is my own....it’s corn, black beans, fresh garlic, green onion, salt, pepper, olive oil and fresh squeezed lime.
You eat this and if refresh’s your palate like crazy.
