Sprouts n picanha roast

Been chatting with Brett and wanted to do his sprouts.
Tonight was a satisfying meal.
Tonight was picanha roast, cap cut off...sprouts, baked potato and a fresh corn and bean salsa.
Everything done on the performer, salsa is fresh.
I’ve been doing taters lately specifically.
Microwave for 20 minutes on power level 2, flipped half way...olive oil and lots of salt....finished on the Q not foiled for about 20 - 30 minutes. Creates a firm skin and has lots flavour.
Picanha was cooked indirect to 118, seared to about 123 and rested for 25 minutes.
Sprouts were done according to Brett....a bit too much char on this one, next set of pics was the first sprout cook, was a bit better.
Quality olive oil, basic rub, garlic, black pepper, seared then cooked indirect for about 20 minutes.
Finished with some parm and balsamic vinegar....
This one was very satisfying.
The corn n bean salsa is my own....it’s corn, black beans, fresh garlic, green onion, salt, pepper, olive oil and fresh squeezed lime.
You eat this and if refresh’s your palate like crazy.
My plate is the last pics.

First sprout cook, early in the week.
Sprouts with the same spice as above, balsamic and parm again.
Lean center chops and pinto beans with jalapeño, they come in a can but taste real good.
Chops were just a tad pink, juicy, another tasty plate.

Looks delicious.

I'm craving potatoes, yet trying to avoid carbs. Yours look good. Tell me they were bland and dry and you fed them to your dog. That might help me.

I did keto before, while white potatoes were not allowed, they changed their mind later on and approved them...
We eat a lot of sweet potato, and a bit of white here and there.
Also trying to follow a specific diet right now...with mild cheats on the weekend....notice the sour creme.
Look into it, I think you can hold ketosis and have taters.

These taters sucked too....
Had to toss them out....

I'm not doing keto so staying in ketosis isn't the issue. I think my current affliction is called lazyAhssCeeosis and I find if I generally follow South Beach phase one foods I can also enjoy carbs in liquid form, but I have to stay away from beers and ales.

Thanks for looking.
I forgot to add the corn n bean salsa is meant to have cilantro in it as well.......
Well, for those that have family members that can eat it.
Makes me sad....:cautious:
