I'm doing 2 10 lb. butts today and didn't get started as early as I intended. My question: Can I pull the butts tonight before they are done, refrigerate and finish tomorrow in the oven?
 
I would up the temp and then foil around 160. Doing that you should be able to get it all done today. Check the info on the site regarding a high heat butt cook.
 
I thought about that but I'm going to try to finish it up tonight without the foil. It's stalled right now at 185, might be up a little late tonight.

Just pulled them off at around 195, the best I've done so far, falling apart tender... total cook time was close to 16 hrs.
