In TVWB primer on Hams, Spiral-Sliced, under "No Prep...", paragraph 3. Ham is placed face down to come to room temp. Ham must be heated face down to avoid slices falling open.

However comma under "Firing the WSM", para 4. Picture 3 appears to show ham lying on its side, cut face facing away.

Are these old eyes deceiving me or is my mind? Is the ham heated (in the WSM), cut face down, as described, or on its side, as appears to be the case in Picture 3? I would think that the ham should be cooked (read heated) as described, not as it appears in the picture. Any advice or clarification will be appreciated.

Also, why heat on the platter, rather than on the grill surface?

Hey,

The ham is heated cut-side down, and the photo you're referring to shows the ham cut-side down in the WSM. But now that I look at it more closely, I can see why you thought the cut side was facing away in the photo. But it wasn't, the shape of the ham makes it look that way.

Why heat it on a pan instead of right on the grill? I didn't want grill marks on the first slice. No big deal, just do what you like!

Thanks for the clarification. I thought that it should be heated face down, but, as you said, it does look like it is facing away.
