This is a recipe we really love. It tastes a little like peanut butter only spicy rather than sweet. You can use this with pork or chicken. I plan to try it with shrimp one day. I mix it with a little olive oil and make a paste. I think any oil wouldwork fine. You can also add a little extra chile powder if you like it really hot. I use the pizza stone to help with the bake process but offset without it will work as well. Just make sure it's elevated and not on a flat surface or the coating will burn.
I did add a little mesquite for smoke, I like the flavor mesquite give to chicken and fish and it gave a nice flavor to the peanut mix. It also added a little more of a browned color.
As usual I plate it with peas and rice, hey, I try and keep it simple.
