Spicy Thai peanut bake

This is a recipe we really love. It tastes a little like peanut butter only spicy rather than sweet. You can use this with pork or chicken. I plan to try it with shrimp one day. I mix it with a little olive oil and make a paste. I think any oil wouldwork fine. You can also add a little extra chile powder if you like it really hot. I use the pizza stone to help with the bake process but offset without it will work as well. Just make sure it's elevated and not on a flat surface or the coating will burn.



I did add a little mesquite for smoke, I like the flavor mesquite give to chicken and fish and it gave a nice flavor to the peanut mix. It also added a little more of a browned color.



As usual I plate it with peas and rice, hey, I try and keep it simple.

Thanks for the replies. You will not be disapointed. Maybe you can play around with the recipe and improve it. If your local store has the peanut mix you will find it in the Asian section. And it's like $2 so you can't go wrong. Please post the results and keep on keepin' on!
