Spatchcocked Poussin


 
Bill I have about a quart and a half of fresh wild blackberries. Also have fresh basil and rosemary and oregano. I'm thinking about doing blackberry, basil, black pepper vinaigrette on chicken and salad. What do you think?
 
Alan I think I would skip the rosemary, but I will tell you what I think would be great for that, pick up some Champagne Vinegar, would be perfect with those black berries

A few Guy's asked about the knife, it is a Mac 200mm Chef Knife model MTH-80, sharpest dang thing I have ever used
