Spares - St Louis Cut Question

Hi all,
Hope you all are enjoying the Labor Day Weekend!

I am doing spares today and want to know what benefit the st louis cut gives you...is it just that they will look more like bbs and will be easier to eat? Is the meat that gets cut away good tasting?

Overall, Why do the st louis cut?

For me it is better presentation, easier to carve and perhaps more even cooking...plus the extra pieces are treats for the cook

Doing a St. Louis cut for me make the ribs easier to eat and easier to manage during the cook. You can throw what you trimed off onto the WSM with your ribs prepped the same way as the ribs. It will get done quicker than the ribs so you can eat as a snack during the cook, break down the meat and add into baked beans, or save it for some other use.
 
Everyone has their own reasons, and yes, the excess meat is delicious.

For me, it's about appearance, it also simplifies the cooking process in my opinion. Being able to lay several racks into a rib rack and not have space issues is nice. Also, when properly trimmed, all you have to deal with when eating is one bone, not all the connective cartilage that must be trimmed out of the remaining meat.
