spare ribs question

I'm going to make spare ribs for the first time next weekend (not that there's anything wrong with Baby Backs...) I'm planning to buy the cryovac packages from Costco and then trim to St. Louis style to make them more user friendly. My question is: what do people do with all the trimmings that result?
 
I usually throw them on the WSM and treat them as a snack. I rub them just like I do the ribs.
 
I freeze them. WHenever we have family come down unexpectedly, I usually pull them out and make chinese style ribs in the oven. Comes out great.

i usually slather,rub and smoke them indirect on the kettle the morning of a WSM rib cook. then i can add them to a mess of of beans and put the pan under the ribs about the halfway point.
 
I guess I'm in the minority here. I never trim my spares. I just take the membrane off. They always seem to cook up fine.
 
Well, those would be "Rib Tips"! Yummy!!
