Sorry again. Works been stupid, and I've been really involved with my new camper. Lots of pics here, but it covers several cooks.
First, some burgers I made a few weekends ago. I posted it to Twitter, but here it is for the first time!
Fresh outta the grinder! The usual mix, sirloin, chuck and short rib. Preseasoned with Weber's Gourmet Burger before grinding.

And formed into patties. 1/3 of a cup, so about 5 ounces.

Onto the Miller Lite SJ over KBB. White cheddar and pretzel buns from TJ's.

Very nice! I still have a pack or two in the freezer.

And I did a stuffed pork loin a couple weeks ago. Stuffed it with spinach, chorizo and sun dried tomatoes. Very nice, but no plated pics!

Next, the Turkey day star! To start, the flaming chimney! It looked so cool, I had to get a pic!

And just your normal "spend $XX and get a turkey for $.39/lb" bird. Spatchcocked and seasoned with salt ,pepper and a compound butter under the skin. The kitchen shears got away from me, so it tasted much better than it looked!:p

And after an hour and 45 minutes, it's done! Juicy and tasty!

After dinner, we went east of there and had one last camping trip, with leftovers for dinner!

And, today we had burgers from the freezer for lunch. On the Miller Lite SJ, over KBB. Served with white cheddar and on Panera brioche buns. very tasty!

I used several coals from the lunch cook to start a snake and cooked tonight and tomorrow's dinners on the OTS! A slab of St. Louis style ribs and a chunk of pork belly for tomorrow. Ribs seasoned with a salt free rub I bought, and the pork belly with some mapuchen style chili powder from the savory Spice Shop.

And, the ribs were done after about 5 hours. Tender! And the rub was very good! Gonna have to get some more.
I thought I got a pic of the ribs when they were finished, but I must have forgot my phone.
Thanks for looking everyone!

OK, my mouth is watering.
I want to get a grinder for my mixer. I keep telling Santa, but I think I've been on the naughty list for some time.

Great to see you back my friend, and some really great cooks! Did you say you got a new camper? Pm me and tell me more, as we bought one ourselves last Easter!
Tim

Some very nice cooks Phil, glad to see you back at it.. We've been grinding our own hamburger too, I use cross rib roast when there on sale, makes really good burgers.

Phil, glad to see you back and man you came back strong. Everything looks delicious.
