Did a whole rack of spares today on the kettle with some hickory and apple wood for smoke. I had some rub in the spice cabinet I had made up a while back labeled "pork rub" that I decided to use it up. I don't even remember what all was in it but it tasted good

. I managed to keep the temp. on the kettle between 250 and 300 for most of the cook despite a pretty windy day today. I haven't done a lot of "low and slow" cooks on the kettle, but just didn't want to pull out the WSM for one rack of ribs. So here goes.

Ribs done. Actually I think I took 'em off too soon. They weren't as tender as I like them despite cooking for over 4 hours.

I started doing ribs on my kettle one day based on the same reasons ("I don't want to pull out the WSM for one rack"). I never went back. lol
 
Ribs. My favorite. I really like the look of the texture of your ribs. I'm sure they were quite delicious.
