Some meals you just have to go back to your roots


 
I grew up with the pine nuts in it. The mobster side (mom's) liked it that way. The ag side (dad's) did not. I go both ways as a nod to both :D
 
I eat this twice a week without the pine nuts. So simple to make and my favorite comfort food. I mix it up sometimes and throw some cherry tomatoes. Extra Parmesan and pepper flakes is a must for me.

Neither of our families (mom's side or dad's side) ever used cheese of either type in it. So the concept seems "foreign" to me though I am sure it's quite good. I think I do with pinole about 50% of the time. I just like to "mix it up". But I did use a nice shot of red pepper flakes AND a chili de arbol pepper in it. Had a little "bite" in there. I just wish I'd had my homemade pasta to use in it. But honestly just a bit too tired after Saturday to make pasta
