Some Fajitas

I was gonna post this the other day, I don't often post my pictures over here, I never think my stuff looks as good as most of the stuff you guys cook and show here. Then I finally got the courage and then that guy posted those Luau pictures and made my dinner look as though I should have gone to McDonalds. However I got over it and decided to post some pictures anyhow. I wanted to use some of my newly aquired equipment. I got out the 22.5 CI griddle and decided to cook the peppers and onions. I got it hot with a pretty large load of Coshell. It did the trick as the griddle got really hot and cooked the Peppers and onions quite nicely,

The colors of the peppers looked so good cooking away, then I tossed on a flank steak and some chicken breasts on my newly aquired CI grate, I was using Royal Oak hardwood in here and I was pleasantly surprised by it and I would use it again,

Once everything was cooked up, I wiped down the griddle and heated up some tortillas, the griddle worked perfectly for this,

I got a steak and a chicken all built up with some fresh guac, and some fire roasted salsa I made earlier in the day. Maybe next week I'll post some pictures of my salsa cooking. I got to use some new toys and everyone was happy. Maybe not as epic as the Luau but it was pretty good.

Yea I seem to love the blue grills, I do have other colors as well...Here is a picture of the peanut gallery out in the yard watching me cook the fajitas,

Looks good Brian! i totally get you on feeling like your food/pics are not up to par with others.

i always feel that way, but i also know we always doubt ourselves.

the table is beautiful. and i love the griddle, that is pretty cool.
 
Becky if I can do it you can, come on. We can find common ground together. There are so many great looking things being cooked here. I can't possibly ever hope to keep up with these maniacs

I spend a lot of time cleaning them, As my charcoal is getting up to speed, I always try to wipe them down. I used to abuse my grills and I had a few get wrecked before their time, so now I try to take care of them. I know wiping them down every other day is a little excessive, but hey. I have a mini smoker that is pretty dirty. I thought to myself I need to clean it this weekend

what do you clean them up with Brian? i have used easy off only on the lids, but have never put it on the actual bowls. my lil family grew quickly and i need to take a weekend to just give them a good thorough cleaning.
 
Once it gets all cleaned up, I maintain it with some pam and 0000 steel wool. Or 409 and and some paper towels. But if is real dirty I would spray oven cleaner and scrub it down.

Troy There are multiple blue grills. Yours is in my performer. I have a whole table built with two grills in in as well Here is a picture if it from before, but I have since put two blue grills in this.

I'll post a picture of the new table this weekend. Thanks for all the kind words from everyone, I'll be a little more brave to post some of my food creations in the future,
