I usually soak the oak chunks in water for an hour before I put them in the smoker. Now I am wondering if maybe dry is better.

Any suggestions?
Thx.

Hey Chris,

I should have known you already covered the topic in the site. Duh!

I like to soak the wood because it gives me something to do since the WSM does everything else.

IMHO it is a total waste of time to soak wood chunks. The water doesn't penetrate more then a 1/16th of an inch at the most. Soaking wood chips will keep them from burning up too fast. Since I got the WSM I only use chunks and never soak them.

I never soak my wood either. Whats the point? Why season or dry wood out to try and add water back into it? I realize it's not sap only water but still. Dry works fine for me. And I get all my wood for free. Ateast maple and fruit wood I do. But it works for me. So I don't really care if they burn up faster. I'll just add more /infopop/emoticons/icon_biggrin.gif
