Smothered Chicken Breasts

Made one of my wife's favorite chicken dishes.

First grilled up some peppers and mushrooms

Chicken breasts on the grill that were marinated in Mojo Criollo all day.

Chicken done. Topped my wife's and my chicken with some onions, peppers and mushrooms that were sauteed on the stove.

Then topped with a piece of pepper jack cheese and melted.

Plated with a side of peppers, mushrooms, nopales, and a sweet potato.

Great recipe! I first had "smothered" steak at a restaurant in Atlanta about 25 years ago. I had grown up eating steak on a plate without any further treatment or garnish. I thought doing anything to steak other than seasoning it was sacrilege. Then I had a top sirloin with onions, peppers and mushrooms, topped with cheese and realized there was another world out there.

Your treatment (including the Mojo bath) is a great way to add some spice and life to a normally bland piece of meat.
