Smoking

Is it possible to get the WSM low enough to smoke sausage? If not what would be the best way to smoke sausage? Do I need to buy an electric smoker with a temperature control on it.

Bones

wsm cold smoke

smoked sausage does get cooked (taken to 140* min) so the wsm will work, you just won't get hours below the cooked point. My first try (see above link) I used favorable ambient temps, and a small fire and those sausages had 2 hours of smoke which was sufficient to flavor them.

before investing in an electric smoker, you may want to see if you can pick up a used hot plate and a pan to burn wood in without generating a lot of heat. I've been looking around for one but haven't found anything yet.

run a hotplate into the bottom of the wsm, put pan on the plate, and fill pan with wood.

I've seen people (most likely here) run their smoker this way, and its essentially how electric smokers run (minus the thermostat).

google around, I'm sure you'll find some pics.

Don't forget this little guy:

It's called the Cold Smoke Generator
and there was a TWVBB thread on it a while ago.
BB Thread I'm planning to get one.

Cheers
