Whoa! I didn’t know that. I’ve never heard of Tender Quick. I looked it up on the Web and it is a Morton Salt product that’s used to cure and tenderize meat. They said a lot of recipes call for Tender Quick but I haven’t come across any of them yet. So, Tender Quick will actually create a smoke ring without smoking? Thanks, that's really interesting stuff.
Yes it contains nitrites which give ham its rosey color. The smoke ring forms from similar compounds in wood smoke. A little tenderquick in a rub will make a punk ring
I found the answer to my own question, I think. You still have to smoke the meat but you add about a tsp of Tender Quick to your rub and wait at least an hour before cooking. However, the better solution is to smoke it right to begin with. Slow smoke the meat at 225-250 for several hours before it starts cooking. Thanks, again.
