Smoking Eggplant

I want to smoke some eggplant to make Baba Ganoush. Anyone have any recommendation on type of wood to use and what temp and time?
 
Eggplant is super porous I wouldn't use any smoke wood, and I would instead peel it, slice it, and grill it over hot charcoal until it's nice and brown on both sides. Then it's ready.
 
When I make baba ganoush I take whole eggplant with skin on and poke wholes all over with a fork . Then I smoke it with what ever wood catches my fancy that day . The eggplant will be ready when it begins to collapse on itself . I try to keep the temp low . Then just slice it in half and scoop out the flesh .
 
What's your favorite variety to grow? I've got a lista de gandia started this year and am looking for some ping tung seedlings. The thai applegreens I grew last year did great, but I didn't find myself using them, just growing them.
