Have done tons of spares on my WSM 18.5. These BB's seem thicker. I used the bend test on spares. Will it work on BB's ? Thanks for any and all input. Also heard they are more like pork chops. How will I tell if they are done to (not fall off the bone but a tender bite through and meat comes cleanly off the bone?
