Smoking a T-Bone steak?

This may be heresy to some steak lovers out there but I've had some really great smoked T-bones before and want to try it on my bullet. Can anyone out there help me with a recipe and smoking procedure for a pair of t-bones? I'd like to add them in on a longer smoke of some boneless turkey breasts and want to make sure I put them on at the right time in the smoke.

Heresy-that sounds accurate. Good luck!

Use thick ones--1.5" or better. Because I don't recommend applying smoke to turkey breadt throughout its cook, I wouldn't do the steaks at the same time, but if you wish to do so then minimize the smoke for the bulk of the turkey cook, then add some smokewood and the steaks at about 80-90% of the way through the turkey-cooking process. Smoke to an internal that's 15?-20? below your target, then sear to finish.

Thanks K. Have you tried smoked t-bone before yourself? if so did you like it?

Sorry to offend your sensibilities Dexter

but the ones I've had before at restaurants have been great. But who knows whether they actually smoked them in a smoker.

I'm not a big fan of T-bones. But I've smoked thick rib-eyes (this is a terrific version) and top blades. Yes, love it.
